Shoot the Moon is the city’s first spot dedicated to DIY pours

Shoot the Moon, the long-awaited self-serve wine bar from Anvil and Underbelly alum Kevin Floyd, is expected to open before the end of 2020.

The team behind the restaurant, at 8155 Long Point, announced its target opening date — November 2020 — along with a NextSeed crowdfunding campaign, in a press release earlier this week.

Floyd, executive director of the project, honed his business chops first at Anvil Bar & Refuge, alongside Bobby Heugel, and then as Chris Shepherd’s business partner at Underbelly and Hay Merchant. In 13 years, he helped open more than 11 bars and restaurants in Houston before selling his stake in Underbelly and taking a much-needed break in 2019.

Shoot the Moon was first announced in fall of 2019, just a few months after the Texas Alcoholic Beverage Commission officially approved self-pour systems for bars and restaurants in the state. An initial Spring 2020 opening date was no doubt delayed by the coronavirus pandemic. The restaurant will be the first of its kind in Houston.

Shoot the Moon’s unique concept will let customers “be their own bartender” by allowing them to pour their own beverages from a tap wall full of wine, beer and other libations. Diners can pour as little as a quarter-ounce of a beverage, allowing them to sample and experience more than 80 drinks at a much lower price than traditional bars or restaurants, according to CultureMap. The self-serve concept will also help reduce guest-employee interactions, perfect for the era of social distancing.

Food-wise, Shoot The Moon will offer a chef-driven, from-scratch food menu, featuring starters, pizza and healthy options like salads. The menu was created with the help of Dax McAnear, who has previously worked as a corporate chef. The environment will be fast-casual — guests will order food at the counter, the proceed directly to the tap wall to choose their beverages.

If all this sounds good, there are likely to be more Shoot the Moon locations in Houston’s future soon. According to the NextSeed listing, STH was founded explicitly with expansion in mind.
