Born out of a pop-up, the new food truck makes it much easier for Houstonians to get their hands on this crispy, spicy yardbird
Rosalyn’s Hot Chicken, a purveyor of super-spicy Nashville-style hot chicken that’s been in Houston since 2016, has officially debuted a brand new food truck.
The new food truck will park at 12310 Cullen Boulevard on Saturdays and Sundays, making it much easier for Houstonians to get their hands on this super-spicy fried chicken. Many think of Rosalyn’s, which began as a kitchen-based pop-up, as Houston’s first destination for authentic Nashville hot chicken after its 2016 debut. After a couple of years of operating pop-ups, selling plates at barbershops and other local businesses, and catering gigs, Rosalyn’s owners Jacques and Kushana Collier decided to invest in their brand new food truck.
“We started in our kitchen on a small $100 deep fryer. We had recently had our son, so my wife would sauce and plate the wings with our son strapped to her back,” Jacques Collier says. “We tested the market by taking samples of our chicken to our co-workers. When we were given their seal of approval we started to sell plates.”
As far as the food is concerned, expect Halal-certified fried chicken wings and tenders at four levels of heat, ranging from “plain” to “extra hot.” Sandwiches are also an option, along with chicken plates that are served with Texas toast and pickles on the side to cool the burn. As the food truck ramps up, expect more menu additions in the coming weeks.
At present, Rosalyn’s Hot Chicken will open from 1 p.m. to 6 p.m. on Saturdays and Sundays on Cullen Boulevard.
